SUGGESTION:

Excellent with grilled red meat, lamb, spaghetti carbonara and soft or hard cheeses.

Serve at room temperature around 16-18 °C.

 TASTING NOTES:

A beautiful, profound ruby hue with purple reflections.

A delicate, subtle nose with pleasing hints of red fruits, including blackberries and plums.

A soft, mellow fruity wine with fine aromatic persistence on notes of black fruit and violets.

VINES:

Geographical location: Situated in Languedoc, some 40 km south of Narbonne, the vines grow in an exceptional terroir with subsoils of clay, limestone and small stones, providing excellent drainage conditions.
Terroir: Clay-limestone soils
Climate: The climate is Mediterranean, alternating between cold, dry winters, sunny springs and warm or hot summers, with temperatures moderated by the influence of the nearby Montagne Noire and by the Tramontane, a wind that sweeps over the vineyards and dries the leaves, helping to prevent diseases. These conditions favour the balanced development of the future harvest, the grapes progressively reaching full maturity of flavour in a perfectly healthy condition.
Density: 4,000 – 4,500 vines/hectare
Average age of vines: 30 years
Productivity: 75 hectolitres/hectare
Vinification: Mechanical harvesting with manual sorting before vatting. Traditional vinification in temperature-controlled stainless steel tanks, with repeated sludge removal and pumping back into the top of the tank in order to extract the tannins and other components and to obtain a good structure.
