Sauvignon Blanc
Geographical location: Reputed to be difficult to cultivate, Sauvignon Blanc has been highly successful in Languedoc Roussillon. The soil is light, comprised of sand and pebbles, providing ideal drainage and allowing the heat accumulated during the day to be restored beneath the vine canopy during the night. The grapes thus gently reach full ripeness.
Terroir: Clay-limestone soils
Climate: The climate is Mediterranean, alternating between cold, dry winters, sunny
springs and warm or hot summers, with temperatures moderated by the influence of the nearby Montagne Noire and by the Tramontane, a wind that sweeps over the vineyards and dries the leaves, helping to prevent diseases. These conditions favour the balanced development of the future harvest, the grapes progressively reaching full maturity of flavour in a perfectly healthy condition.
Density: 4,000 – 4,500 vines/hectare
Average age of vines: 20 years
Productivity: 70 hectolitres/hectare
Vinification: Mechanical harvesting. Harvesting takes place at night, from 2 o’clock in the morning, to take full advantage of the cool conditions and preserve the primary aromas, thus avoiding any risk of oxidation. Maturing in temperature controlled stainless steel tanks.
